We often make cakes in the oven and they, of course, turn good and spongy...but, not everyone has an oven and not everyone uses it.

My blog has got so many sweets and desserts and not only cakes. I would also like my blog readers to check out other desserts cum sweets like which can be tried for special occasions.

About the recipe

I have used basic ingredients like maida, sugar, butter, vanilla extract and baking powder to make this simple plain sponge cake.

Therefore, I have shared the detail recipe on how to make sponge cake in pressure cooker which has turned as spongy, soft and moist as made in oven.

We often confuse ourselves with the cooking time and temperature to maintain in the oven.

But, in a pressure cooker, we do not need to consider all this and just a few easy points to remember gives us a delicious, soft, spongy cake in a pressure cooker.

It's a simple and plain cake with vanilla flavor and I have used eggs and shall soon be sharing an eggless sponge cake in the cooker too.

I would be glad to receive the feedback for this pressure cooker cake so that I can share more of pressure cooker cakes as I keep making more cakes.

Baking the cake in a microwave oven

  • If baking in the oven, then preheat the oven at 180 degrees and then place the cake pan into it.
  • Bake the cake for 40-45 minutes and check by inserting a knife or a toothpick.
  • If the cake batter does not stick to the knife or a toothpick, it is perfect or bake it for few more minutes or until the toothpick comes out clean without any batter sticking to it.
  • Do not use objects that are not safe while making recipes in the oven. Always use microwave-safe bowls and utensils and they are easily available in markets.

Baking the cake without oven

  • Do not worry if no microwave oven at your home as this is a simple no oven cake.
  • It can be easily baked and as perfect as the cake made in the oven.
  • Use a pressure cooker without putting the whistle while baking or use a wok and cover the wok with a lid while baking the cake or use a pateela which is made of aluminium and cook the cake.
  • The cooking time is the same and we need to uncover the lid and keep a check on the cake by inserting a toothpick or a knife. If the toothpick comes out clean, the cake is perfect and if not, cook the cake for few more minutes and cook until the knife comes out clean.
  • Always maintain a low flame and not high as the cake does not get cooked from inside and burns completely from the outside.

It's a plain vanilla sponge cake without an oven and I have also shared a video procedure below to make this vanilla sponge cake which is fluffy and soft.

The cake has not turned dry and it has turned absolutely perfect and similar to the one made in the oven.

Step by step procedure

Greasing and flouring the pan

  • Take a cake pan and apply butter all over the pan and grease well.
  • Add some maida/all purpose flour into the pan so that cake does not stick.
  • Cover the entire pan with flour by rotating the pan carefully and finally dust off the excess flour.

Making the cake batter

  • In a bowl, add 4 eggs to whisk well.
  • whisk the eggs well until frothy texture appears.
  • Into it, add powdered sugar and mix well.
  • Whisk the sugar for 2 minutes until the sugar dissolves well.
  • Add maida/all purpose flour.
  • also add baking powder, add pinch of salt .
  • Mix the batter without lumps so that cake comes out soft.
  • Add melted butter into it and mix without lumps.
  • Add vanilla extract and mix the whole batter without any lumps.
  • Mix the whole batter without lumps and the cake batter is ready. Mix it until the batter forms ribbons while pouring.
  • Take the greased and floured pan. Pour the cake batter into the cake pan but make sure to pour from the centre.
  • tap the pan carefully to remove any air bubbles in the batter.
  • Take a pressure cooker. Into it, add sand all over the base and spread it evenly. If no sand then use salt at the base. You can also place a steel stand on sand if available. This setting is just to separate the cake pan from direct heat.
  • Place the cake pan inside the cooker carefully over the sand and not shake.
  • Cover the lid of the pressure cooker but do not use the whistle.
  • Cook on medium flame for 10 minutes.
  • Cook on low flame for 50-60 minutes.
  • Switch off the flame.
  • Check whether the cake is done with the help of a toothpick. Take a toothpick and insert the toothpick into the cake.
  • If the tooth pick comes out clean without any cake sticking to it then the cake is perfectly done, else cook the cake for few more minutes until tooth pick comes out clean.
  • Take the pan out of the cooker, cool it down.
  • Run a knife at the sides of the pan and edges of the pan to loosen the cake.
  • Invert the pan and carefully lift the pan.
  • Cake separates perfectly from the pan. Perfect pressure cooker cake is ready.

Note: If the cake smells eggy, then add only 3 eggs and while mixing the batter, if the batter turns out thick, add little milk and mix the batter.

FAQ'S

What can I use in place of sand to bake a cake?

You can use salt as the base to bake the cake if sand is not available.

Can we bake without salt or sand in cooker or pot?

Yes, one can place a stand between the vessel and pan and place the pan on the stand and bake the cake.

Can I bake without using a cooker in a wok or pan?

Yes, make a base of salt or sand at the base, place a steel stand over the sand or salt. After this set up place the cake pan on the stand , close the lid and bake the cake until it is nicely done.

I do not have aluminium pan what should I use?

To bake without oven, one can even use a steel bowl, but grease it well with oil or butter before pouring the cake batter into it.

Should I preheat the cooker ?

Yes, the cooker can be preheated after adding salt or sand to cut short the baking time. Once preheated the cake can be baked in 40-45 minutes depending on the kind of flame we use.

When to add milk?

Milk can be added if the batter is too thick to mix and to make it soft, spongy, moist 2-3 teaspoon warm water too can be added in place of milk.

Tips

My cake sticks to bottom and does not come out what should I do?

The answer to this is nothing but greasing and flouring should be done properly.
Follow these two steps below
Before pouring cake into the batter, it is mandatory to apply oil/butter all over the pan for the cake to demould well. After greasing flouring the pan is also essential.
Second point to note is to use baking paper at the base of the pan immediately after greasing to avoid cake sticking to the base and to demould the cake without sticking.

Can I use water in place of salt and sand at the base?

Yes, water too can be poured at the bottom, place the cake pan over the stand and cover the lid and bake the cake.

How will I know whether my cake is cooked or not?

Just insert a tooth pick after 30 to 35 minutes and check if any batter is sticking to the tooth pick or knife inserted.

If these things come out clean without any batter to them, it is a sign of the cake done perfectly. If there is any batter attached to them, bake the cake until they come out clean after inserting.

Can we make without egg?

Yes, skip eggs and use condensed milk in place of the egg and I have already shared eggless cake recipes on the blog. The recipes are eggless vanilla cake , eggless cake in cooker.
