Every once in a long while, hubbs picks up some vegan goodies to try and I need to figure out how and where to use them to finish them up! Field Roast Sausages ended up in the refrigerator like that. I discovered them two weeks after they were put in there. The refrigerator can eat up things some times you know:).

I have never eaten or tasted any pig products, bacon or even sausages. But hubbs has tasted or eaten some. I fall in the category where I don’t like the texture and taste of fake meats now, because well they remind me of meat/chicken. Hubbs however used to love meaty food and the umami that comes with it. We both eat plant-based and have our own reasons to be vegan. But that doesnt mean that we gave up meat/dairy because we did not like it. We did for ethical reasons and for the environment and the planet. This is a question that gets frequently asked. Why do vegans want to eat fake meat or cheese?. it is because some of us do like the taste of the things but would rather eat a plant based version of it. Idon’tlike fake meats, but Ido like cheesy vegan options.

So back to the sausages. I made some hot dog sandwiches for him one night and there were still a few left to finish. I remembered seeing sausage and potato hashes at our old favorite breakfast place. Hence this hash. I picked and ate half the potatoes;)

Potato Sausage Hash with Mustard Mayo dressing.
Allergen Information: Free of dairy, egg, corn, nut.

Ingredients:
Hash:
2 teaspoons oil
2 large potatoes, cubed
½ a red bell pepper
3 sausages or frankfurters cut ½ inch
⅓ tsp salt
½-1 tsp cumin powder
½ tsp Chipotle pepper powder
½ tsp parsley
1 tsp lemon juice
Dressing:
2 Tbsps vegan mayo or tahini
1 Tbsp prepared mustard
2 Tbsps almond milk or water
a pinch of salt and pepper

Method:
Whisk all the ingredients for the dressing and keep ready.
In a pan, add oil and heat on low-medium heat. Add potatoes, toss, cover and cook for 10-12 minutes until potatoes are tender crisp. Stir once in between. In another small pan, add a tsp of oil and heat on medium. Add the sausage and cook until brown on the edges. Add the bell pepper and sausage to the potatoes. Add salt and spices and mix well. Cook without cover for another 10 minutes. Stir 2-3 times in between. Check to see if potatoes are done. Add lemon juice and black pepper and serve hot with a dollop of the mustard mayo, cilantro and pickles or pickled jalapeno.

    Stop complaining about fake meat, like Vegan sausages or so. they’re don’t remind of meat one single bit, just forget the name Sausage cause it has nothing to do with it.. it taste good, and aslong as we don’t eat meat, be happy! end of discussion.

    We still have the occasional meal with fake meat but definitely far fewer than when we were vegetarian – I can take it or leave it, there are some comfort foods that Justin would really miss so I’d say he is definitely a fan!

      Your Potato has with sausages looks so yummy! I sometimes buy Field Roast sausages – they are pretty good as processed food goes. The Apple Sage is nice and mild, the Italian is a little spicy and the Mexican Chipoltle puts my mouth on fire – and I used to love ‘hot’. I’m Vegan since July 2013 and was a meat-eater for more than 60 years!! Big change! Thank you for your recipes!! 🙂

      As I said I went Vegan in July 2013 – and, I don’t eat soy! That certainly does restrict me. Oh – my point is, I now eat Daiya Cheeses – they are so good!

    it’s a perennial discussion topic, isn’t it, meat substitutes? Some think they’re terrible, others don’t. I think they’re wonderful if you gave up meat for the sake of animals, but still like the flavour/texture. My daughter’s young school friends wouldn’t come round for tea because we didn’t eat the same foods – I offered burgers, chips and peas, and they were happy – my family’s first foray into meat substitutes began! Other nights we ate all kinds of everything, but to keep youngsters happy, we ate veggie burgers – we seem to have survived, she’s just turned 31:) Each to his/her own – the animals still get saved!

      there is some crazy hate out there for the meat subs, but everyone seems to be ok with cheese. We seem to forget that whatever we eat, we are eating plant based and saving animals 🙂 I prefer a bowl full of grains/beans and veggies any day and would love to see more of that in vegan restaurants.

    I have never eaten fake meat, I also can’t deal with the texture however I can totally understand why some people would want to, having converted to a vegetarian or vegan diet.

    That said, the mustard mayo dressing looks delicious, yum!

    I frequently make dishes like this for weekend brunch (usually with beans, because I’m not a huge fake meat person…I mean I do like them but try to limit consumption). The idea of the mustard mayo on top is new to me but pretty awesome–I definitely want to try adding that to my next concoction!

    i’m with you- i have no desire to eat fake meat products. last year, i was served fake chicken at a vegan restaurant (it was with work, so the menu was prefixed. i took one bite and spit it out! too real for me…

    HOWEVER, this is a great way to use up those field sausages. it reminds me of a super hearty breakfast my father would eat 😉

      i know right. the first time i handled a sausage i had to look how to even open it and use it 🙂 then i decided i better put some fake meat dishes up my sleeve to be able to feed anyone with an even stronger preference for fake meats:)

    Looks good and the dressing sounds great! Truthfully, when I used to eat meat, I never liked it much – the texture bothered me, but of course that wasn’t ultimately the reason I went veg – but I was crazy for cheese. So I’m always trying vegan cheese alternatives now.

      i wasnt that crazy abt cheese either. so in our initial transition months we just didnt eat any. then after some daiya and questions about vegan cheese,i decided to atleast try some cheeses and know which work 🙂

    I recently had a pack of Field Roast sausages too! I don’t buy things like that often but oh yum! They were good 🙂 Too bad mine are gone now or I’d totally make this!

      I would never pick them up coz i wouldnt know what to do with them. Hubbs however has other plans sometimes. which is great because he also picks up veggies and greens i might not pick up but then i use them because they are there:)
