As head chef of Galvin at Windows, high up in the London Hilton hotel on Park Lane, Marc Hardiman has had a bird’s eye view of the preparations for the King’s coronation. “It’s incredible how much we can witness from here — not just across Hyde Park but in the gardens at Buckingham Palace, where we’ve watched the marquees going up,” he says.
While composing his celebratory menu, he has drawn on inside tips from a friend who used to work in the royal household. “He told me King Charles’s favourite pudding was a lemon cream.” Baked cheesy eggs are also popular with the King. “He keeps lots of chickens at Highgrove, so we wanted to use eggs in one course.” Chicken is the centrepiece
