- Unlike spaghetti noodles, don't overcook egg noodles or they'll fall apart when stirred during rehydration.
- The spiral shape of egg noodles have a tendency to make them stack and nest in each other, separatebest as you can to avoid large clumps.
- Egg noodles take up a lot of volume, they can be crushed after dehydration to take up less space.
- They greatly benefit from an extended rehydration soak.
